Hillary's Vegan Thai Style Soup

Vegan Thai-style Soup
Serves 6
  • 8 cups water
  • 4 carrots, chopped
  • 3 medium sweet potatoes, peeled and chopped
  • 1 leek, chopped finely
  • 1” fresh ginger, peeled and chopped finely
  • 1/2 teaspoon chili flakes (more or less to your liking)
  • 1/4 teaspoon garam masala
  • 2-3 bok choy, chopped finely
  • Small carton of baby tomatoes, cut each in halves
  • 1 can unsweetened full fat coconut milk
  • 2 limes, cut into 8 slices / each serving 
  • Fresh basil handfull
  • Salt 
  • pepper
  1. Water sauté carrots, leeks, ginger, sweet potatoes with 1 cup water until medium firm.
  2. Pour contents into pot with 7 cups water.
  3. Add garam masala and chili flakes.
  4. Cook on medium until carrots are soft about 20 minutes.
  5. Add coconut milk, bokchoy and tomatoes and cook on medium for another 10-15  minutes. 
  6. Add salt and pepper to taste. ​
  7. Serve and add lime squeeze with fresh basil leaves to garnish!
Sum yum soup!
